When Alton Brown tells you that you should turn on the ventilator fan, open the windows and open the doors before laying down the piece of meat to sear, he means *really* open the windows and doors and don't just turn on the fan. 

Good thing it's warm enough to open all the windows or the house would still be smelling of smoke!

...and our lovely Boston ventilators just recycle the air back into the room. Good thing we have a cross-breeze.
